4-INGREDIENT VEGAN RED VELVET COOKIES

These 4-Ingredient Vegan Red Velvet Cookies make the perfect gift for vegans and non-vegans. And, they're fool-proof. Make them for festive holidays including Valentine's Day, Christmas and Canada Day.

Ingredients

  • 1 box red velvet cake mix
  • 2 flax eggs
  • 1/2 cup oil (neutral tasting)
  • 1 bar white chocolate (vegan)

Instructions

  • Preheat the oven to 350ºF.
  • Combine 2 tbsp of ground flaxseed with 5 tbsp of water and set aside.
  • Line a baking sheet with a silicone mat or parchment paper.
  • Roughly chop the white chocolate.
  • Once the flax egg has gelled up, combine all the ingredients in a medium-sized bowl.
  • Rolled dough into 2 tbsp size balls and bake in the oven for 10-12 mins.
  • Take them out when they look slightly underdone and allow them to cool (and bake thoroughly) on the pan.
